Quality, Family and Tradition
Pasticceria Brignone was founded more than 50 yearsi ago by the spouses Celestino and Giuseppina Brignone in the same place where it is still active today. And the historic pastry shop in Dronero, a small town not far from Cuneo, at the foot of the Piedmontese Alps.
Our story is the perfect combination of tradition, innovation and imagination, three values that guide the work of our pastry chefs on a daily basis
It is a delicious sweet, made up of two crumbly meringues and a heart of chocolate, rum and custard (in the classic version with white wrapping) or with gianduja chocolate cream (with TONDA GENTILE TRILOBATA hazelnut cream, blue wrapping and without liquor).
With a delicate and sweet scent, it boasts qualities of uniqueness on the market.
Tradition traces its invention back to around 1890, thanks to the intuition of the master pastry chef and mayor of Dronero Giuseppe Galletti, whose school inspired all the Cuneo pralines.
The recipe was already awarded at the international trade show in Turin in 1905. All the successful pralines of Cuneo are inspired by this recipe.
Over the years, many people have been able to appreciate the uniqueness of our Droneresi, from critics such as Edoardo Raspelli, to Paolo Massobrio is Davide Paolini, to the Prince of Monaco, passing through the thousands of customers we satisfy every year.
With more than 50 years of activity, we continue in the totally artisanal production of our Droneresi.
Passing through three generations, technological advancement has not affected the production method, which remains 100% manual and traditional: starting from the choice of the raw material, arriving at the wrapping without the use of machinery, passing through a production process that over the years it has not known any changes: a characteristic that ensures the product's uniqueness and character on the market.
Rum Droneresi (Bianchi)
Meringues filled with chocolate cream (30%) and rum (16%).
INGREDIENTS: sugar, dark chocolate (cocoa mass and butter, sugar, lecithin, vanillin), WHOLE MILK, rum alcohol (water, alcohol, flavorings, cane distillate), organic free-range EGGS, corn starch.
STORAGE: 45 days, in a cool and dry place, away from heat sources and direct sunlight. No refrigerator.
Gianduja Droneresi (Blue)
Meringues filled with chocolate cream (40%) and hazelnut cream TONDE GENTILE TRILOBATA (30%)
INGREDIENTS: sugar, dark chocolate (cocoa mass and butter, sugar, lecithin, vanillin), WHOLE MILK, organic free-range EGGS, ROUND GENTILE TRILOBATE HAZELNUT
STORAGE: About 30 days, in a cool and dry place, away from heat sources and direct sunlight. No refrigerator.
